Spicy Black Bean Soup

 
Sometimes you just need some time out of the kitchen, so you have more time to spend with your love. My solution? A big pot of soup. This soup is a staple in our house. Very low calorie, full of vegetables, and packed full of spice. I make a large pot of this soup before the weekend, so that when we need something to fill us up, I just go to the fridge and heat up 2 bowls of this healthy spicy soup. It satisfies our hunger for hours on end, without affecting the waistline. Having this pre-made, really frees up time so we can just focus on each other. 
Romantic Tip: Make a big pot of your favorite soup before the weekend. You can have bread or crackers on hand too. Then spend the free-time focusing on your love instead of what to cook.


Spicy Black Bean Soup

3 tablespoons olive oil
1 large white onion , chopped
4 garlic cloves , minced
1 stalk celery , diced
2 Jalapeno peppers , minced
1 carrot stick
2 teaspoons salt
4 teaspoons cumin
4 teaspoons chili powder
½ teaspoon black pepper
2 (16 ounce) cans chicken broth
2 (16 ounce) cans black beans , drained
3 tablespoons fresh lime juice

Optional Garnishes: Greek Yogurt or sour cream, cheddar cheese, parsley, cilantro, tortilla chips.

In a large pan, saute onion, garlic, celery and Serrano peppers until tender, about 5 minutes.
Add cumin, chili powder and pepper to coat onion mixture.
Add beans and chicken broth reduce at a low boil until sauce thickens, about 30 minutes.
Add fresh lime juice, and Serve with garnishes of your choice.
