Thai Ginger Lime Lemon Grass Claypot Chicken

You know what I like? Getting old fashioned mail. These days it seems like every time I go to the mailbox, all I get is a big pile of advertisements. Every once in a while there is something legit in there that surprises me. It makes me smile to hear from people in old fashioned snail mail. 

Romantic Tip: Send your love a letter at work or even home. You can disguise it in a regular business envelope and it can be funny or/and romantic. Or even a little naughty if you're planning a special evening together.

I like to make a lot of different types of foods. That way my Man never gets bored with dinner. Keep him guessing! This Thai Ginger Lime Lemon Grass Claypot Chicken is amazing and perfect for a romantic dinner for two. 
Thai Ginger Lime Lemon Grass Claypot Chicken

1 lb chicken breast pieces
1 cup sliced baby bella mushrooms
1 1/2 cups seafood stock
1/8 cup fresh ginger, thinly sliced and cut into matchsticks
2 cloves garlic, finely chopped
2 tsp.soy sauce
1/2 Tbsp. fish sauce
1 Tbsp Lemongrass, minced
1 red pepper thinly sliced into batons
1 bay leaf
2 lime leaves
Juice of 1/2 a lime
1 fresh jalapeno diced fine
1 1/2 TBSP brown sugar
1/4 cup red onion cut into slivers
1/8 cup green onions, sliced
1 cups chopped broccoli
In a large pan, place the mushrooms, seafood stock, ginger, garlic, soy sauce, fish sauce, lemongrass, red pepper bay leaf, lime leaves, juice of one lime, jalapeno, sugar, red onion and green onions. Stir well to combine and bring to a boil.

Add the chicken pieces, and broccoli. Bring back to a boil, then cover and simmer for 20 minutes, stirring often.
Remove bay leaves and lime leaves.
Transfer the ingredients to individual Pots, or serving bowls.

This dish is best served with steamed white rice and lime wedges served on the side, for people to have the option of adding more lime.
