Soy Ginger Shrimp and Noodle Salad

 
Yesterday was so busy! I did all my household chores, cleaning from top to bottom, laundry, cooking and then set into writing. I had a few articles I had to get done and I accomplished finishing them all! Once I realized what time it was, it was already 4:30pm, time to start dinner. The minute I put my apron on, my husband walked through the door home early from work. He took me out on a spontaneous date. His timing was perfect because I was just about to put the food on the stove. No work for me! We had a nice quiet meal in a corner booth away from the crowds and it was lovely. Sometimes you just need to take a few minutes out of the crazy busy life and enjoy each other.
Romantic tip: Set aside a time to just be spontaneous. Go out, go to a movie, or dinner, or dancing, or even to a live show. Whatever floats your boat. The time alone will bring you closer together and refuel you for the rest of the week. 

I am still working with Thai Kitchen and just love this noodle salad. Healthy, quick and easy to throw together. Your partner will think you were in the kitchen for hours.

Soy Ginger Shrimp and Noodle Salad

1/4 cup oil
1 tablespoon lemon juice
1 tablespoon soy sauce
1 1/2 cups coleslaw mix
1 cup peeled and de-veined cooked shrimp
1/2 cup diced red bell pepper

Cook noodles as directed on package. Drain and rinse with cold water.

Mix oil, lemon juice, soy sauce and Sauce in small bowl until well blended.

Place noodles, coleslaw mix, shrimp and bell pepper in large bowl. Add dressing; toss gently to evenly coat. Sprinkle with Topping
