Spicy Asian Slaw


  Last weekend we were so busy with a local wine event, I didn't have time to make dinner. So my loving husband went out and got some takeout from a local Asian fusion restaurant. He came home with some spicy Asian slaw that he just loved. I like to pack that kind of information in the back of my mind so that I can surprise him with a homemade (better) version of the dish. So today in my husbands lunch he is going to be pleased to find this Spicy Asian Slaw that is sure to knock his socks off. My husband loves heat, so I leave the seeds in the Serrano when I cut it. If you only like mild heat, you can remove the seeds. 
Romantic Tip: When your partner raves about a dish, surprise them with a homemade version of it without letting them know. You are sure to make them smile!


Spicy Asian Slaw

1/3 cup canola oil
1/3 cup fish sauce
1/4 cup fresh lime juice
1/4 cup rice vinegar
1 TBSP sugar
1 TBSP chopped garlic
1 chopped serrano pepper
2 TB chopped fresh mint
1 head cabbage cored and shredded
2 cups grated carrots

Mix first 7 ingredients together and whisk well. Toss together carrots, mint and cabbage. Pour wet ingredients over and toss. Refrigerate until ready to use. I stir mine every 30 minutes or so to make sure the flavors are well distributed. Strain prior to serving.
